Our Origins

I Should Coco was born out of Jonny’s passion for ice cream in 2017. The name came from something his Grandad always used to say: “I should coco.” It stuck, and when Jonny perfected his coconut-based ice cream recipe — something tricky to pull off in a soft-serve machine, especially when it’s dairy-free — he knew it was the perfect fit. Back in the day, Jonny was referred to as "Mister Coco" and even the "Walter White of ice cream" for his obsessive pursuit of the perfect formula.

Seven years on, we're serving up the same delicious, creamy coconut soft serve, and Liela has joined Jonny to help grow the business. Our mission is simple: making ice cream accessible for everyone. We believe everyone, no matter their allergies or dietary needs, should be able to enjoy a soft serve experience.

We’re also committed to sustainability, using compostable packaging and ethically sourced ingredients - because we want to do right by the planet as much as we do by our customers.
